Ingredients
  1. 400g pappardelle
  2. 80g bacon, diced
  3. 50g dried porcini mushrooms
  4. 1 carrot
  5. 1 celery
  6. 1/4 onion
  7. 1 clove garlic
  8. 1 tablespoon heavy cream
  9. Extra virgin olive oil (for cooking)
  10. Salt and pepper to taste
  11. White wine to evaporate

1- First, put the dried porcini mushrooms in warm water to thaw them a bit. Meanwhile, finely chop the carrot, onion and celery.

2- In a pan, fry the garlic and chopped vegetables in extra virgin olive oil.

3- When they are golden, add the diced speck and cook until brown.

4- Pour in the white wine and let the alcohol evaporate. Then add the mushrooms (remember to save the water they were soaking in). Sauté the mushrooms, add salt and pepper.

5- Filter the mushroom water to remove any stray bits, and pour about two tablespoons into the pan to cover the mushrooms. Reduce heat, cover the pan and cook for 20 minutes, until the sauce is nice and creamy.

6- Add a tablespoon of cream, let it soak in and turn off the flame.

7- Meanwhile, boil the pappardelle in salted water, drain and dress with the mushroom and speck ragù and 2-3 tablespoons of grated parmesan cheese.

8- Serve the pasta hot with a sprinkle of parmesan cheese and black pepper.
