For the sauce
  1. 1 liter of milk
  2. 5 tablespoons of flour
  3. 3/4 stick of butter
For the lasagna
  1. 1 pack of lasagna noodles by Giovanni Rana
  2. 2 lbs of spinach
  3. 3 cups of ricotta cheese
  4. 0.5 oz chopped onion
  5. 1 tablespoon of oil
  6. 3 cups of grated grana padano cheese

Description:

1- Fry the onion in a pan and add the spinach, allowing it to warm up. When spinach is cooked, remove from heat and let cool.

2- In a separate pan, melt the butter, taking care not to burn it.

3- Once the butter has melted, pour in five tablespoons of flour and stir, you will see a lumpy texture appear.

4- Now pour in the milk little by little, continuing to stir as you go. Stir until the sauce becomes creamy and smooth, without lumps. When the sauce bubbles, remove from heat and let cool.

5- Once the ingredients are cooked and ready, you can begin to prepare the pasta. In a rectangular pan, sprinkle the bottom with 3 tablespoons of sauce. Spread over two sheets of the lasagna noodle.

6- Sprinkle the sheets with two tablespoons of cottage cheese and spinach. Pour the sauce over the spinach and add the grana padano. Cover with the other lasagna noodles.

7- Continue in this order until all the ingredients are used. The last layer of your lasagna sprinkle with extra ricotta, sauce and grana padano. Bake at 350°F for 45 minutes.

8- When the lasagna is ready, remove from oven and wait a few minutes before cutting. Serve hot.
