Ingredients
  1. 2 cups pumpkin pie filling (NOT puree - make sure it's the pie filling)
  2. 1/2 cup brown sugar, packed
  3. 2 - 8 ounce containers of cream cheese (whipped if possible)
Instructions
  1. If using block cream cheese, start by whipping your cream cheese. It helps if it's room temperature.
  2. Combine pie filling and brown sugar with whipped cream cheese, mix well.
  3. Serve with graham crackers, vanilla wafers, apple slices, bananas or marshmallows!

Ingredients
  1. 1/2 tablespoon olive oil
  2. 1 (14.5 ounce can) white beans, drained
  3. 1/3 cup sour cream
  4. 2 cloves of garlic, roughly chopped
  5. Juice of a half lime
  6. 1/2 teaspoon ground cumin
  7. 1/4 teaspoon salt (if needed)
  8. 1 cup shredded, cooked chicken
  9. 1/2 cup sweet corn (fresh or frozen)
  10. 2 tablespoons minced cilantro
  11. 1 1/4 cups mozzarella/cheddar cheese combination, divided
  12. 1/3 cup diced red peppers
  13. 1/3 cup + 1 tablespoon salsa verde
Instructions
  1. Preheat the oven to 375 degrees. Brush olive oil onto bottom and halfway up sides of a 10 inch cast iron skillet, or a size thereabouts.
  2. Reserve 1/4 cup of the drained beans, set aside. Add the rest of the beans, sour cream, garlic, lime juice and cumin to a food processor. Puree until smooth. Taste and add a little salt if needed. Stir in chicken, corn, cilantro and a 1/2 cup of cheese.
  3. Spread onto bottom of skillet, then evenly sprinkle remaining 1/4 cup white beans, red peppers and salsa verde on top of the mixture. Cover with remaining cheese. Bake for 16-20 minutes, until dip is bubbling and browned on top. Serve immediately. Can be rewarmed as needed

Ingredients
  1. 1 (10 ounce) package frozen chopped spinach, thawed and drained
  2. 1/2 cup red bell pepper, diced
  3. 1 tablespoon minced garlic
  4. 1 (6.5 ounce) jar artichoke hearts, drained and mashed
  5. 1/2 cup sour cream
  6. 1/2 cup grated parmesan cheese salt and ground black pepper to taste
  7. 1/4 cup heavy cream
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix together spinach, bell pepper, garlic, artichokes, sour cream, and parmesan cheese. Season with salt and pepper. Mixture will be thick; add cream to thin to dip consistency. Spoon into a 1-quart baking dish.
  3. Bake for 20 minutes, or until bubbly. Serve with crackers.
