  2. 2.6 lb of ripe yellow apples (approximately)
  3. 3 medium eggs
  4. 6 oz of brown sugar (use white if preferred)
  5. Half a stick of butter, melted
  6. 1/4 cup of milk
  7. 4.5 oz of flour (I suggest Kamut)
  8. 1 packet of baking powder
  9. 2 tablespoons sugar
For the custard
  1. 4 egg yolks
  2. 3.5 oz of brown sugar
  3. 1.5 grams of flour
  4. 1/2 liter of whole milk
  5. 1 vanilla bean

Preparation:

1- Take four large apples, wash well and peel them, taking care to remove every remnant of peel. The apple skin is very dry and could ruin the sweet taste of the dish.

2- Take a bowl large enough to hold all the ingredients, and cut the apples: first in half, then into slices, then fine and thin. It’s important that the apple pieces are small, as they will absorb the mixture and not dry up. Transfer the apples into a large bowl.

3- In a bowl, blend the flour with two tablespoons of powdered sugar and baking powder. Add together in the mixture of apples, milk, butter, eggs and sugar. Stir the mixture until you get a soft but solid texture the color of the egg yolk,  perfectly blended.

4- Take a pan with a diameter of about 25 cm and line it with parchment paper, even on the sides. Pour the dough into the pan making sure to fully cover all areas, without creating air bubbles.

5- Bake at 250 degrees for about 25-30 minutes (or until you see the apples start to caramelize and the inside hardens). My oven took about 45 minutes. To see if the cake is cooked, take a toothpick and dip it in the center. If you pull it out and it looks dry and clean, the cake is ready.

When finished, always allow the cake to cool for a few minutes before removing it from the pan and cutting it. It’s best to cut it when warm so it will not break.
