  1. 15 oz all purpose flour
  2. 1 teaspoon baking soda
  3. 2 teaspoons ginger
  4. A pinch of salt
  5. 1/2 teaspoon cinnamon
  6. 1/2 teaspoon nutmeg
  7. 3.5 oz granulated sugar
  8. 1 stick of butter
  9. 1 large egg
  10. 3.5 oz honey
  11. 2 oz maple syrup
  12. Milk for brushing
  13. Cane sugar to decorate

1- Mix the flour, the baking soda, the salt, the ginger, the nutmeg and the cinnamon and set aside.

2- Whip the butter and the sugar with electric mixer until smooth. Then add the egg, the honey and the maple syrup, continuing to work the mixture.

3- Add the mix of flour and spices one tablespoon at a time, always continuing to work the mixture.

4- Once it’s all blended together, wrap in foil and put it in the fridge for at least 5 hours.

5- Roll out the dough on a floured surface to a thickness of about 3-4mm, and cut with a teddy bear shaped cookie cutter.

6- Roll out the cookies on a baking sheet lined with parchment paper. Make two holes in the bears at the base of the arms, brush the biscuits with milk, decorate with cane sugar and put in the fridge for half an hour.

7- Bake cookies in preheated oven at 350 degrees for 15 minutes.
 
 
8- While still slightly warm (they should still be slightly malleable), reinforce the holes, being careful not to break the cookies.

9- When the cookies are cooled, pass a ribbon through the holes and hang your gingerbread garland.
