  1. One pork loin, 500g (tied with kitchen string and rosemary)
  2. Salt and pepper
  3. Extra virgin olive oil
  4. A dab of butter
  5. ½ cup white wine
  6. 1 and 1/2 apples
  7. 1/2 onion chopped

1- Rub the meat with salt and freshly ground black pepper to flavor.

2- Put a double-bottomed saucepan over high heat, and melt a dab butter (or amount desired) in extra virgin olive oil. Add a clove of crushed garlic and the pork. Brown it well on all sides, turning gently.

3- Pour the white wine on the pork and let it evaporate.

4- Reduce the heat, remove the garlic, and add the apples and the onion peeled and chopped into wedges. Mix the onions and apples in the sauce on the bottom of the pan, cover the pan and cook the meat for 45-50 minutes, turning occasionally and stirring the sauce.

5- When cooked, remove the pork loin from the pan, wrap in aluminum foil and let it rest.

6- Slice the pork and serve with the hot apples and onions chopped into small pieces, or blend them to have a creamy sauce.
