1- First prepare the mixture for the crepes: Whisk together egg and milk, add salt, all purpose flour and oatmeal flour, sifted to avoid lumps. Combine well and let sit.

2- Meanwhile, cut the figs into 4 pieces. Peel the pears and cut into 8 pieces.

3- In a pan, combine sugar, water, and lemon juice and let melt. When the syrup starts to blend, add the pieces of pear, then the figs 3 minutes later, and let them soften. Turn off and set aside.

4- Prepare the crepes: Melt butter in a small pan, add a scoop of the crepes mixture and rotate the pan to spread over the entire surface. When you are able to lift the crepe’s edges, the bottom will be cooked. Flip the crepe over with a spatula and cook the other side.

5- Pour some syrup over the crepes and add fruit; fold one or two times (depending on size) and fill with leftover syrup, extra fruit, and sifted powdered sugar.

6- Eat crepes warm, or prepare the batter and leave it in the fridge to prepare when ready.
